About 5 ounces uncooked pasta (I used spaghetti here)
Extra virgin olive oil
About two cups button mushrooms, cleaned and sliced
2 cloves garlic, peeled and smashed with the flat side of a knife
Large pinch crushed red pepper
About 1/4 cup dry white wine
1 pound spinach
Freshly grated parmesan
Once the pasta is ready, pour a ladleful of the pasta water into the pan with the mushrooms and spinach, then add the strained pasta into the pan as well. Stir to coat pasta in cooking liquid. Let this mix bubble together for a couple minutes. Once the liquid has cooked down a bit it's ready to go. Season with salt and pepper and serve with grated parmesan and extra crushed red pepper.
