Grilled corn is one of my summertime favorites. It's one of the few things that you can really only get in season, so I try to enjoy it as long as it lasts. All you really need to do is shuck it, throw it on the grill until it's nice and charred, and then add a little salt and butter to finish. If, however, you're not opposed to spending just a couple minutes in the kitchen, you can throw together this simple dip. It adds a little heat, smokiness, and richness to the corn (or any grilled vegetable), and you won't need to go near your oven.
1/2 cup plain Greek yogurt
3 cloves garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 teaspoon honey
Mix together first 6 ingredients. Season with salt to taste. Spread on freshly grilled corn, or use as a dip for any grilled or roasted vegetable you choose.
This dish is best served with your favorite summer cocktail and a group of friends. Bonus points for firing up the grill straight from the beach or pool. Enjoy!
