All this cocktail requires is three ingredients and a blender. First up, we have frozen pineapple pieces. Frozen pineapple allows you to make this concoction year round, and it means you don't have to water down your drink with ice. Phew. Next is coconut milk. Because fruity drinks can sometimes be a bit sweet for my taste, I prefer coconut milk to coconut cream. Same tropical fruit flavor, just a bit less sugary. If you're looking for that more traditional piña colada flavor, go with coconut cream. And last but certainly not least: rum. I love the flavor a dark aged rum adds, so that's what I'm using here.

1 cup frozen pineapple pieces
1 cup coconut milk (or, if you prefer a sweeter drink, coconut cream)
4 ounces dark aged rum (I used Trigo for this recipe)
Add all ingredients to a blender and blend until smooth. Pour into chilled cocktail glasses and serve.
