Cherry balsamic shrub (I used this recipe from Reclaiming Provincial and loved it, but fair warning that it takes a good 48 hours before it's ready. I have half a mind to make this just like I would a simple syrup, using balsamic vinegar instead of water. Let me know if you try that method.)
2 ounces Bourbon
Soda water (optional)
Add 1 to 2 teaspoons shrub to a cocktail glass (I opted for two because it was so darn tasty) along with bitters and bourbon and stir to mix. Twist orange peel over glass to release juices and drop in. Fill glass with ice. If using, top with soda water.
