Anyway, who's ready for a drink?
I am a huge fan of Thai iced tea. It reminds me of Friday nights when I was little and my parents would take us to the Thai restaurant nearby. It's smoky and rich and sweet and, quite frankly, I'm shocked (shocked!) I hadn't thought to add booze to it earlier. I've added bourbon to this drink today because it has a rich sweetness of its own that I think pairs nicely with the tea, but I bet rum would do a mighty fine job as well.
1 ounce bourbon
1/2 cup strong iced Thai or black tea
Splash coconut milk or sweetened condensed milk (sweetened condensed milk is the classic here, but I like the flavor of coconut so that's what I used today)
Stir together tea and bourbon in a glass with ice. Top with a splash of the coconut milk or sweetened condensed milk and serve.
Here's to another week in the books!
